One of the things that it’s good to learn when you are trying to cook more cheaply, is that it doesn’t all have to be cheap: this is a flatbread recipe made from expensive organic blue cornmeal that is fantastic by itself;
but, it also makes a really good pizza crust at about a third of the price for a pre-made gluten-free pizza crust.
Ingredients:
1 1/4 cup blue corn masa ($7.00 a lb, with shipping)
1 cup water
2 tablespoons olive oil

dish towel
12 inch cast iron pan
oven
kitchen timer
Directions:
Mix the blue corn masa and water in a 2 cup measure. Cover with a dish towel and let sit in the refrigerator or some other undisturbed spot for at least eight hours. Pour 2 tablespoons of olive oil into the cast iron pan. Turn the oven broiler on. Set the timer for twelve to fourteen minutes. At twelve minutes, check the pan. If it doesn’t look a little burned yet, give it another minute or two. (Your ambient temperature may matter. At the time this was prepared, the temperature in my kitchen was about 68 degrees.)
Take the pan out of the oven, and let it cool.
Serves 4. About $3.75 per recipe.
Note: To use as a pizza crust, flip the bread so that the oily side is up. Cover in tomato sauce, some kind of cheese, and toppings. Bake at 350 degrees for about ten minutes.
