Made with shelf-stable, inexpensive ingredients, this is one of my cheap favorites.
Ingredients:
3 tablespoons liquid sweetener (sugar syrup, maple syrup, agave nectar, or honey)
1/3 cup Hershey’s cocoa powder
1 teaspoon vanilla extract (check that it says gluten-free)
1 package Mori-Nu Firm Tofu
1/2 tsp McCormick’s Chili Powder (Omit this if you’re making the recipe for small children.)
Kitchen Apparati:
blender
spatula for scraping sides
1/4 cup water
Directions:
Open the carton of tofu and put it into the blender in chunks. Add the liquid sweetener, vanilla, chili powder if you’re using it, and water. Turn the blender on the “puree” setting, stopping every minute or so to scrape down the sides. Pour the pudding out of the blender when it looks like it’s all one uniform chocolate color. Serves about three adults, or five children. (Especially if you put it in tiny little tupperware containers for kid lunches.)

Definitely going to try this. Why not silken tofu?
Actually, this is silken tofu. (Mori-nu is silken tofu.) It’s the firm version of silken tofu because it’ll be runny if it’s not firm tofu.
